Digby Pines Joins The Ascend Hotel Collection

Choice Hotels Canada is pleased to announce the newest member of its Ascend Hotel Collection, Digby Pines Golf Resort & Spa. The property, located in Digby, Nova Scotia, is the third Ascend to open in the province and 11th nationwide.
Located on the western coast overlooking the Bay of Fundy, the Signature Resorts of Nova Scotia property is the perfect escape for travellers looking for a secluded getaway. With a rich history dating back to 1929, the property is comprised of a main lodge which includes 85 guestrooms and 31 independent cottages ranging from one to three-bedroom accommodations.

Welcoming Chef Jamie MacAulay

This season, we’re excited to welcome the passionate and talented Chef Jamie MacAulay to our Kitchen Team!
Here’s a little about our new chef:
Jamie began his career early on washing dishes in local pubs and working as a line cook while attending high school and college for graphic design. After deciding to become a cook full time he moved to whistler BC and began training under chef Bernard Casavant CCC.
He continued a mentor-ship under Chef Bernard in Okanagan wine country as Sous Chef of the Senora Room at the Burrowing Owl Estate Winery. This presented an excellent opportunity to cook in a completely local atmosphere with talented chefs, working closely with passionate growers and farmers.
During the 2010 winter Olympics in British Columbia, Jamie was selected as the Catering Chef for the New York and Lake Placid Olympic athletes at their friendship center in the heart of Whistler Village
Jamie has worked in many facets of the hospitality industry, from consulting, to assistant chef Instructor at the Vancouver community college, to working as a chef in kitchens of the world renowned Fairmont Hotels and Resorts, to butcher at Market by Jean George, the award winning New York chef. Jamie has also been cooking locally as sous chef at the exceptional Fid Restro.
Most recently, Jamie has been the Chef instructor for the Learning Kitchen with FEED NOVA SCOTIA, providing a culinary skills work project, and servicing meals to shelters and kitchens in the metro area.
