Chef Dale, presently resides in Nova Scotia, but has spent many years as a chef in famous Toronto kitchens, as well as leading food and beverage teams at several luxurious hotels including The Delta Halifax in Nova Scotia.
Most recently, he was the Executive Chef at the luxurious Algonquin Resort in St. Andrews, New Brunswick. He is a master of his craft and enjoys using fresh local products in his artistry.
He is also is a chef educator, working with community colleges as a consultant and substitute instructor, as well as a Canadian culinary ambassador assisting Canadian Airlines to develop in-flight meals for first class passengers. Chef Dale has also represented the country in a cultural exchange with Taiwan.
In recent years he has helped raise more than $100,000 for local charities through culinary related fundraisers.
His passion for teaching and cooking comes through in his work and we cannot wait to see what he will bring back to the Digby Pines Golf Resort and Spa table!
